Marc d'Entremont
Years of experience as a chef, historian and teacher guides my travel and food writing. I explore the environmental factors and history that shape a culture. As a chef I am interested in the foods available, how to prepare their particular dishes and why a national cuisine developed in this land. Lastly, what factors are causing change? These questions are equally important whether writing about remote regions of the Andes or the county next to my hometown.
My professional background includes positions as a historian and writing teacher, chef/educator, executive chef, business owner/manager in the hospitality industry and, currently, full-time freelance travel/food writer.
I am an active member of the American Culinary Federation, the International Food, Wine and Travel Writers Association and host of two web sites: www.travelpenandpalate.com and www.travel-with-pen-and-palate-argentina.com
